Prawn Caesar Salad


500g cooked Tropic Co Australian Prawns 

Baguette sliced

2 cups parmesan cheese, grated 

8 slices of prosciutto

500g cherry tomatoes 

2 baby cos lettuce, cut into quarters


Buttermilk dressing 

1 1/2 cups buttermilk 

1tsp Dijon mustard 

1 tbsp balsamic vinegar 

1bsp chives, finely chopped 


Step 1

Preheat oven to 160°. Peel and de-vine prawns.

Step 2

To make the dressing, mix all the dressing ingredients together.

Step 3

Sprinkle parmesan on bread then place on a baking tray lined with baking paper. Add prosciutto and tomatoes and bake for 12 minutes or until golden. Set aside to cool.

Step 4

Place wedges of lettuce on serving plates, top with prawns, prosciutto, tomatoes and parmesan bread. Spoon over dressing and enjoy!
