Prawn & Dill Quiche


18 cooked Tropic Co Australian Tiger Prawns
6 sheets frozen Shortcrust Pastry
250 ml Cream
100 ml milk
1 tablespoon Lemon juice
4 Eggs
1 tablespoon chopped Dill
Sea Salt & freshly cracked Black Pepper
Crème Fraîche, Lemon & Parsley to serve


Step 1

Preheat oven to 180ºC and line the base of a tart tin with pastry. Line the pastry with baking paper and ?ll with baking beans or rice. Bake for 15 minutes or until slightly golden.

Step 2

Peel, devein and chop prawns.

Step 3

Place into a bowl with cream, milk, lemon juice, eggs and dill. Season with salt and pepper and mix with a fork until combined.

Step 4

Pour mixture into tart cases, cook for 15-20 minutes or until just set.

Step 5

Serve with crème fraîche, lemon and parsley.
