Prawn Paella


1 large onion, finely chopped

5 tbsp olive oil

2 tomatoes,  chopped

1/2 teaspoon sugar

1 tsp sweet paprika

1tsp turmeric 

2 cups arborio rice

3 cups stock, plus more if needed

1 cup dry white wine

10 green beans, chopped

12 cooked Tropic Co Aussie Tiger Prawns,  peeled with tails intact

8  mussels, scrubbed & debearded

Salt & pepper, to season


Step 1

Heat oil and fry the onion in a paella pan until soft, stirring often. Stir in the garlic, and before it begins to color, add the tomatoes. Add the sugar, sweet paprika, and turmeric and stir well until the tomatoes are reduced to a thick sauce. Add the rice and stir well until all the grains are coated.

Step 2

Pour the stock and wine over the rice and, bring to a boil. Stir well and spread the rice out evenly in the pan, then leave to cook over low heat for 20 minutes, moving the pan around and rotating it so that the rice cooks evenly.

Step 3

Steam the mussels in a lidded pot. As soon as they open, they are cooked. Throw away any that have not opened.

Step 4

Add extra stock to the rice and top with the prawns and beans. Leave to cook until the rice is dry and the prawns and beans are heated through. Turn off the heat, add oysters and enjoy!
