Prawn Pasta with Pesto & Cherry Tomatoes
3 cups Baby Spinach
1 cup Basil Leaves
cup Parmesan Cheese
cup Pine Nuts
1 Garlic Clove
cup Olive Oil
10 cooked Tropic Co Tiger Prawns
½ Brown Onion
2 Garlic Cloves
½ Red Chilli
½ punnet Cherry Tomatoes
2 tbsp Olive Oil
- Step 1
Boil water in a deep pot and cook the Pasta according to packet instructions. Drain and set aside.
- Step 2
Add all Pesto ingredients except the Olive Oil into a blender and blend. Slowly pour in the Olive Oil and blend to your desired consistency.
- Step 3
Simmer Olive Oil in a hot pan for 1 minute. Add finely diced Onion, Garlic and Chilli to the pan and cook for 3 minutes until the Onion is translucent.
- Step 4
Add Prawns and Cherry Tomato halves into the pan and cook for 2 minutes.
- Step 5
Add the cooked Pasta into the pan and stir through. Add 4 tablespoons of the Pesto into the Pasta and stir through.
- Step 6
Serve with fresh Parmesan Cheese.
