Prawn, Tomato & Goats Cheese Bruschetta
100g of goat cheese, sliced or crumbled into smaller pieces
¼ cup olive oil
⅓ cup fresh dill sprigs, finely chopped (plus extra sprigs for serving)
1 tsp of chilli flakes
Salt and pepper, to taste
½ baguette, lightly toasted
250g cherry tomatoes, halved
16 cooked Topic Co Aussie Tiger Prawns, peeled and deveined
- Step 1
In a measuring jug or small bowl, whisk together olive oil, dill and chilli flakes and season generously with salt and pepper.
- Step 2
Arrange goats cheese pieces in a single layer on one half of a large baking dish. Add cherry tomatoes to the other side.
- Step 3
Evenly drizzle over the olive oil mixture, tossing tomatoes to coat. Cover tightly and allow to marinate in the fridge for at least 30 minutes, or overnight.
- Step 4
To serve, allow goat cheese and tomatoes to come to room temperature. Spread goat cheese, over toasted baguette slices, topped with marinated cherry tomatoes, cooked prawns and fresh sprigs of dill. Drizzle with any remaining marinade oil and serve immediately.
