Prawn Zoodles


2 zucchini, trimmed and spiralized 
Cherry tomatoes, halved
Red onion, thinly sliced
12 cooked Tropic Co Aussie Tiger Prawns, peeled and deveined
Basil leaves, to serve
1/4 cup pine nuts
1 1/2 cups fresh basil leaves
2 small garlic cloves, halved
3/4 cup shredded parmesan
5 tablespoons olive oil


Step 1

In a large bowl, combine zucchini, tomatoes, red onion and prawns.

Step 2

To make the pesto, combine all ingredients in a small food processor and blitz until smooth.

Step 3

Serve combined salad with pesto and top with fresh basil leaves.
